Will I ever have to touch code?

Can I save something half-finished?
Yes, as often as you like. The published version keeps serving the site until somebody with permission publishes, and an entry with unsaved edits says which fields differ from what is live.
What if I am not allowed to publish?
Then you will not see a publish button. Roles decide what appears, so nothing on screen is a control that would refuse you.
